Country Apple Pie
Pastry: 500 g flour · 250 g sugar · 150 g butter · 4 eggs · ½ glass milk ·
washed and grated rind of one lemon · pinch of salt · 1 sachet vanilla flavour raising agent
Filling: 800 g apples · 150 g sugar · 150 g macaroons · 100 g sultanas · 50 g pine seeds ·
1 pinch of cinnamon
To prepare the filling
Dice the peeled apples, add the sugar and boilt for 15 minutes. Leave to cool and add the crushed macaroons, sultanas, pine seeds and cinnamon and mix well.
To prepare the pastry
Sift the flour onto a pastry board, making a well in the middle.
Add the sugar, the cut softened butter, salt, lemon rind, milk and eggs.
Quickly mix until a smooth dough is obtained; add the raising agent last, making sure that it is blended in properly. Roll out the pastry and line a greased and floured baking pan, covering the sides.
To prepare the pie
Put the filling into the pastry, level it out with a knife and decorate with the pastry trimmings.
Bake in a preheated oven for 50 minutes at moderate temperature without opening the oven door;
leave the pie to stand in the oven for a further 5 minutes after it has baked.
