Wafers and Orange Mascarpone Cheese
Wafers: 100 g egg whites · 100 g strong white flour · 100 g honey · 100 g butter
Cream: 3 egg yolks · 60 g sugar · 125 g whipped cream · 250 g mascarpone cheese ·
Orange flavouring · grated orange peel
Garnish: orange juice · Corn flour · icing sugar · strawberries · peaches
Mix all the ingredients for the wafers. Roll out the daugh 2 mm thick and cut out 10 cm diameter discs.
Bake in the oven for 3-5 minutes at 180°. Remove from the oven and shape to resemble baskets.
In a basin whisk the egg yolks with the sugar, add the cream cheese, orange flavouring and grated rind.
Blend in the whipped cream. Spoon this cream into the wafer baskets;
garnish with orange sauce made from fresh orange juice, sugar (100 g per litre of water)
and a little corn flour, strawberries and peaches.
Sprinkle with icing sugar.
